Ki Noh Bi Gin is a cask aged version of our classic KI NO BI Kyoto Dry Gin. Filled into cask at a high strength, the gin is carefully monitored by our distilling team during the maturation process to ensure the optimum balance between botanical flavours and influence from the wood. They then review the final liquid, making minor adjustments using the 6 Elements to maintain the overall harmony. KI NOH BI is bottled after dilution with Fushimi water.

This gin is extra special as it was matured in ex-Karuizawa sherry casks, marking the first-ever collaboration between Japanese whisky and Japanese gin. The Kyoto Distillery’s “Ki Noh Bi” Dry Gin is also the first Japanese gin to collaborate with the Noh Theatre, like the legendary Karuizawa distillery did before it. Noh is one of Japan’s traditional performing arts.13th Edition is a blend of 2 different Karuizawa ex-Sherry casks and some Mizunara virgin oak cask as well. This is the 13th Edition in the Ki Noh Bi bottle Series.

A specially formulated version of KI NO BI, using 11 botanicals distilled in six flavour categories but in different proportions.  KI NOH BI Ed 13 has been aged in 2 separate casks before they were blended together.  One was an ex-Karuizawa sherry butt and the other a Puncheon Mizunara cask. Cask ageing has clearly added new unique flavours whilst retaining the subtlety of the spirit.
